I have seen these delicious cookies floating around the world wide web (and Instagram) for some time now, so I finally had to try them for myself. To be perfectly honest, I have made these before, and they were scrumptious. However, I do think that this batch is even better. Why? Well they are slightly less cooked (but as these only have 3 ingredients, there’s no harm in under-cooking them!).
The first batch I ever made (months ago) were a deep brown color, while these have retained the fair “oat” color of the ingredients. I kind of prefer them this way. They are chewy but with a nice crispy-crunchy bottom and edges. They are lightly sweet, thanks to the banana and the chocolate chips. They are also incredibly filling and will satisfy any sweet tooth, without feeling too heavy or unhealthy. My boyfriend likes to say, “I need something sweet” almost every night. Well now he (and I) can reach for these whenever we have a hankering for a pastry or a treat. I’m not huge on sweets myself, which is why I like this recipe. It’s very cheap and easy to prepare, and you can whip up a quick batch of 6 large, thick Chocolate Chip Banana Oat cookies in your kitchen in about 30 minutes or less.
Prep Time: 5 mins ⁄ Cook time: 15-20 mins ⁄ Total Time: 20-30 mins ⁄
Yield: about 6 large cookies
- (2) large, ripe bananas
- (3) cups old-fashioned oats (uncooked)
- (1/3) cup chocolate chips (can substitute vegan chocolate for this to make this vegetarian dessert into a vegan delight, you can also add more or use less for your own dietary preferences)
- oven or toaster oven (I made this batch in the toaster oven and I much prefer doing it this way!)
- baking sheet or cookie sheet
- mixing bowl
- Preheat oven to 350F (or set toaster oven to “Bake” and preheat to 350F)
- In a medium bowl, mash peeled bananas with a fork
- Add oats and chocolate chips (or other toppings, perhaps nuts or peanut butter) and mix well
- Using your hands, form “dough” into flat patties, about 3-4 inches large
- Line or grease your baking/cookie sheet, put formed “dough” patties onto the sheet about an inch apart (these cookies don’t really spread while baking like traditional cookie dough, so you can space them less far apart if you’d like)
- Bake for approximately 15-20 mins (they are done when the edges are slightly brown, the chocolate chips are slightly melted, and your kitchen is filled with the wonderful aroma of baking bananas…you can also test doneness by pressing them in the middle lightly with a finger…they should be solid but with a slight give)
As you can see, this recipe is cheap and easy as can be. This can be a fun baking activity for parents and kids, too, as it is hardly messy at all (easy clean up), and easy directions that even a child can follow. You can also add any ingredients that you’d like, maybe a bit of agave, honey, or vanilla extract to add a bit of extra sweetness, or peanut butter to make this an entirely different kind of treat. The best part about recipes like these are that they are easily customizable, and it’s fun to play baker and see what you can come up with~
